We did not want to make just any cookie. These had to be special. Special in a way that this cookie is not only gluten free but healthy as well, without the eater even knowing it. We wanted to use organic and GMO-free ingredients as much as possible. It’s not an easy or cheap task to source ingredients that are gluten free, GMO-free, and organic. In doing so, our ingredients are some of the finest that are available. Remember, we make these cookies for our family to eat. We do not want to risk our health or yours with lesser quality products.
Take for example one of the most popular brand of chocolate chip gluten free cookies on the market. Many manufacturers, like this one, eliminate gluten and replace it with other products that are not conducive to your health. Here is a list of ingredients found in this typical gluten free chocolate chip cookie:
Cane Sugar, Dark Chocolate (Cane Sugar, Unsweetened Chocolate, Cocoa Butter, Soy Lecithin, Vanilla Extract, Natural Flavors), White Rice Flour, Palm Fruit Oil, Potato Starch, Water, Tapioca Flour, Molasses, Sea Salt, Vanilla Extract, Xanthan Gum, Baking Soda, Natural Tocopherols (Vitamin E).
The cookie is comprised of 14 ingredients, many of which are less than healthy. They do not incorporate any non-GMO or organic ingredients at all. White rice flour and potato starch are high glycemic products and are processed to a point where they are not healthy and lack the vitamins and minerals of a nutritious food. NOW TAKE A LOOK AT OUR INGREDIENTS. We have 28 to 32 ingredients (depending on the cookie flavor) sourced from either non-GMO or organic (and sometimes both). We also have protein (most cookies do not have protein. It is expensive.) which can make these cookies act as a meal replacement. In fact, many customers will eat these for breakfast and not feel hungry for the whole day. Here are a few of our important ingredients and why they are special.
Take our vanilla for example. It is wild-crafted in the islands of the South Pacific. The beans of this Dark Tahitian Vanilla are hand-picked and are dried in the pacific sun before they are ground into a fine powder in a Certified Organic Facility. If you think you have smelled vanilla, guess again. This has a scent that is like nothing you have smelled before. This is not your run-of-the-mill, alcohol based vanilla liquid extract. This is the whole vanilla. It sells for $160 per pound. Yes, you read this right. One pound. We could have chosen cheaper, but our cookies would not be the same.
We use extra virgin, raw, organic coconut oil. This oil is unique because it is not processed by wet milling or a quick drying process. It is extracted by using a centrifuge with fresh coconuts, which is the way to extract the purest coconut oil. This oil is loaded with short and medium chain fatty acids. Coconut oil is classified in six categories. But guess what? Our oil is above the highest grade oil classified. This oil can cost up to three times the price of normal coconut oil.
Our non-GMO protein comes from Canadian Yellow Peas and is one of the finest proteins on the market because of strict standards and its excellent amino acid profile. It is also absent in gluten, lactose and cholesterol. Our non-GMO rice protein is hypoallergenic and is grown in Belgium. It is a natural, complete protein which is one of the most easily digestible grain-based proteins, and it contains all essential and non-essential amino acids. The protein has an amino acid profile that resembles mothers’ milk by 96%. We use these products at a much greater expense than Asian brands on the market. We could not take the chance of having a purity or adulteration issue as these proteins have seen in the past. That is why we use the best protein we could find. In addition, protein is not usually found in cookies. We added it to appeal to the sports industry and athletes. Many people use our cookies as a meal-on-the-go. Ever have a cookie for breakfast and feel good about it? We do.
What cookie has barley/alfalfa grass? These do and you would never know it. We choose the dehydrated juice of freshly harvested, organically grown, gluten free young barley grass and alfalfa grass that is grown outside in the sun rather than the many dead and freeze-dried green juice powders on the market. The barley grass we use is densely packed with vitamins, minerals, essential amino acids, chlorophyll, flavonoids, trace elements, antioxidants and countless micronutrients. This is well worth the price!
The sorghum flour we use isn’t just your run-of-the-mill gluten free flour. The whole sorghum kernel keeps all its outer layers which are edible. Because of this, it is full of nutrients, including high antioxidants. There is also a wax that covers the outside of the grain containing policosanols, a compound with many health benefits. Compared to traditional white flour, sorghum flour costs more than 900% more.
Coconut Palm Sugar
Our organic sweetener is cultivated on the island Java in Indonesia. It is derived from evaporating the nectar of palm tree blossoms. This low glycemic sweetener is loaded with potassium, magnesium, zinc, B1, B2, B3, B6 and vitamin C. This product costs $7 per pound vs 50c or less per pound for white sugar. Healthy is not cheap.
We use organic Arriba Cacao that is considered by many to be the best available because of the aroma and flavor. The Cacao is sun dried, hand peeled and stone ground to preserve its natural mineral density, such as iron and potassium. It has more antioxidants than acai berries. This product again is not cheap. We won’t skimp and use a lesser grade. The cookies would not taste as good and would lack the health benefits. As a substitute for regular hydrogenated shortening that is the fat of choice in most cookies on the market, we use organic palm oil which has no hydrogenated fats and zero trans fats.
It would be much cheaper for us to source typical salt which is processed with chemicals to leave you with sodium chloride, an unnatural form of salt. But we pay up to get the best salt possible from the Himalayas. It contains all 84 elements found in your body.
We decided to use parchment paper in the beginning. Not all parchment papers are the same. We went with a 100% unbleached silicone-based paper. This worked out great, but we felt like we were not kind to the environment with disposing this after a few uses. We looked further and found baking mats. The homework began. There are many different brands of baking mats on the market. In fact, there are many that say they conform to FDA and NSF standards. This sounds good, but just saying that you conform to standards and actually being tested by the NSF are two different things. We wanted to make sure that this product would be tested and confirmed. We found a product that met our requirements. We found a product that was manufactured in France and is held to strict standards with health in mind. These mats cost us three to four times what other “want-to-be” mats cost. Our mats conform to FDA regulations and are NSF certified and Kosher certified.
