Many gluten-free cookies on the market today use extra sugar and starchy substitutes like white rice flour and potato starch to make up for the lack of gluten that holds dough together and facilitates a chewy or crispy texture. Non-GMO brown rice flour and whole sorghum flour are the staple gluten-free grains. Plant-based proteins such as pea and rice proteins are added along with chia seeds rich in Omega 3 fatty acids and fiber. Almond butter (a mono-unsaturated fatty acid) joins with organic coconut oil and non-hydrogenated palm oil (both amazing sources of medium-chain fatty acids) to accentuate not only the nutrition but the flavor and texture.
We prepare a blend of sweeteners to keep the glycemic effect lower than your typical cookie. We use low glycemic coconut nectar, brown rice syrup, a bit of Xylitol (a sugar alcohol), stevia (our personal favorite herb sweetener), and a touch of dried whole sugar cane (retaining its minerals and electrolytes). Fibers such as chia, xanthan gum and resistant starch are mixed in to help keep blood sugar stable.
Dark chocolate chips contain a high 65% cacao for important antioxidants. Spices not only enhance flavor but are mixed in every batch for their health protective properties. And for minerals and chlorophyll, can you believe we add alfalfa and barley grass? The different cookie flavors bring in organic raisins, gluten-free oats, and roasted peanuts.

ARE THESE COOKIES GLUTEN-FREE, NON-GMO, AND ORGANIC?
We will always use gluten free ingredients in our cookies. The barley grass we source is from Hallelujah Acres and is harvested before the head of grain develops, so it is gluten free. “Independent lab test results confirm that BarleyMax powder is gluten free (http://www.barleymax.com). Our objective is to also source GMO-free and Certified Organic products as much as possible. Sometimes there is a lack of availability and/or it is cost prohibitive to source ingredients that meet all three criteria simultaneously. We always look for ingredients from farms that use sustainable, eco-friendly farming techniques. We would only feed you what we would eat ourselves.
Each batch is handmade and cooled before shipping. If kept in a cool place, they can last up to two weeks. It is best to keep them in the refrigerator or freezer to last longer (up to 2 months). Take a cookie out of the freezer and microwave it for 10 seconds to soften, or another 5 to 10 seconds if you want it really warm. Remember, we do not use preservatives.
Gluten Free Cookies do not contain dairy, eggs, wheat, or any ingredients that include gluten. The cookies contain almonds, and the Peanut Butter Cookie also contains peanuts. The lecithin is sourced from non-GMO soy and/or sunflowers.
WILL THE CHOCOLATE CHIPS MELT DURING SHIPPING?
The natural chocolate chips can melt during shipping, depending upon the local temperature. This will not affect the taste or quality of the cookie. However, if you are concerned about presentation, for an additional cost, we can ship them to you in a temperature-controlled container. See the option in the store.
ARE THE COOKIES GOOD FOR DIABETICS?
As with anything, check with your doctor first if concerned. The sugar content has been lessened from a typical dessert cookie by using coconut nectar (glycemic index of 35), xylitol (sugar alcohol), stevia and resistant starch. The cookies do include a small amount of Sucanat (whole dried sugar cane). Fiber from chia seeds, whole brown rice, sorghum and xanthan gum also work to slow down blood sugar spikes. We have many requests for cookies from diabetics as they tell us the cookie helps sustain them for long periods of time. It is important to work with your doctor and to keep your blood sugar levels in check.

WHY DON’T YOU HAVE EXTRA FANCY PACKAGING AND GIFT WRAPPING?
At GlutenFreeCookies.com we focus on the quality of our ingredients and the ability to bake a cookie that tastes great and is healthy but does not taste like it. Our ingredients are expensive (see “Tell me more about the price” page) and we would rather focus on the product and not the packaging. Don’t get us wrong–our packaging is nice, but it’s not the fancy gift wrapping or beautiful color matched, poofy color coordinated specialty wrapping papers, or logo embossed boxes. Instead of increasing the price to include these disposable fancy packaging, we would rather give you the best price we can for our cookies.
HOW LONG DOES IT TAKE TO RECEIVE MY ORDER?
During the summer months, we avoid shipping later in the week so your GlutenFreeCookies order doesn’t sit at a FedEx facility over the weekend. Standard shipping is available Monday, Tuesday and Wednesday. Orders placed after 2 p.m. CA time on Wednesday are held until the following Monday unless you request it sooner.
Gluten Free Cookies are shipped by either USPS or FedEx (your choice). We want your cookies to arrive as quickly as possible. Your shipping confirmation email will contain a tracking number for your convenience. Please make sure your shipping address is a physical address, as we do not ship to P.O. boxes.
Your shipping cost depends on the weight of the package, how far away you are, and the speed to get to you. To find your exact shipping cost, place the items you would like to order in your shopping cart, continue on to the next step in the checkout process and enter your address. We are VERY aware that shipping is expensive. We pass on the direct shipping cost that we pay to either USPS or Fedex and never add a handling or service fee of any kind. You pay what we pay and we agree that it’s a lot! We have no control over these prices unfortunately.
IS IT OKAY TO EAT MY COOKIES IF THEY ARRIVED WARM?
The reusable ice pack and insulated box ensure your cookies make it out of our bakery without melting. When your package arrives, the ice pack will be melted and the cookies might be warm. There is no loss of quality with warm cookies. They can be placed in the refrigerator or freezer upon arrival to cool them. Or, they can be enjoyed immediately!
